It's not the notes I'm having problems with, it's the technique. Can you design something to sync up with my technique so I know when to move, and how to move, and hold my bow?

NotesHelper allows you much more then just following the notes, because it sync the notes and the music, you can practice only specific segments of the song and also adjust the tempo.
Regarding your request,
There are a few options:
A. Notes-Helper allows you to add custom text next to each "Marker" (markers are placed anywhere you like and are synced with your audio)
B. This is probably the best option for you. Instead of using a sheet music, make a large image of all the ways you should be holding your violen (a big image consisting small images).
then sync this image with the audio using NotesHelper.
