Of course, Grieg and Bizet, but I also love Carl Orff's "Carmina Burana", especially "O Fortuna". That said, I also like little bits from practically every composer. Grieg and Bizet, I feel, are too under-appreciated. Not their major works, but small ones, like Bizet's "Jeaux d'Enfants" and Grieg's "Lyric Pieces". No offense, but I prefer Grieg's simple pieces to Chopin's extravagant ones. Grieg's works give me a feeling of family, sentimentality, and long-time tradition.
My favorite classical composer is Bach with his soothing melodies and incredibly brillant arpeggios. I really love his Well-Tampered Clavier book series (correct me if that's the wrong title). I especially the Prelude and Fugue in C minor...OH WHAT A PIECE!!
