I'm not entirely sure if this is possible, but I'm also not very adept at using this program, but is it possible to change Tempo/Time Signature/Key Signature/etc. in the middle of a piece? If so, can somebody tell me how?

If you're talking about the free downloadable version, no, you can't do any of that helpful stuff. It's a real pain, especially when composing larger, longer works.
