How would I know if my pads need replacing? I'm looking at them, and some of them look sort of uneven.

haha, yea when they fall of or if you sound gets really distorted and weird. If it sounds like you have a buble, but you cant find it, its a pad

Yeah, if they fall off, that's a dead giveaway. If a key isn't sealing correctly and you're getting funny sounding notes, that's another sign too. If you have to push a certain key harder than the rest, yet another sign. Basically any sign that you have to over-compensate on your instrument means something is up.
Pads can rip or bubble too. If the membrane is ripped, then certainly get it replaced. Sometimes if quite a few pads are in need of replacement, some keys are out of alignment, and you notice your instrument isn't playing nearly as well as it used to, an overhaul might be a good idea, especially if you play a lot.
Without pictures or more descriptions of what's going on, it's hard to tell. Take it to your friendly local music repair shop and they can give you advice. Also,you can ask a private music teacher. I refrain from saying to ask your band director, only because their primary instrument could have been a brass, and they may not be as familiar with woodwind pads as a private teacher, but if you trust their opinion, ask anyway.
