I am about to have a student who is 2 years old :-) If the child's hands are small, you can give him/her a sopranino to learn on. But one thing is sure: NEVER give students a german fingered model, unless it's already decided that the goal is NOT the recorder but another woodwind instrument. German fingered recorders are not serious musical instruments, rather toys or learning aids for other woodwinds. 
As for ensemble music, this site has a lot of good renaissance MIDI files:  http://www.curtisclark.org/emusic/ . Use a notation program and print a score of them. They are mostly 4 part scores.
