I've written an eBook for helping people to manage Classical Music and Opera CDs in iTunes (actually it will work for any media player but I focus on iTunes because a large number of people use iTunes). On the same page (at the bottom) I also have a free guide available for download, "How to Create an MP3 CD in iTunes in Track Order". You can download a copy of the table of contents of the eBook and a bit of the first chapter for free, too!

The book will help you:
1) organize and tag your classical music
2) create high-quality MP3 copies of your music using EAC and LAME

Naturally you don't need to use EAC and LAME to rip your CDs -- you can always use the iTunes encoder. But either way the eBook will help you organize and tag your music to make access easier.

Please check it out!
